Cape Cod June 1973 - sent by Nancy (Moir) Barton

One of my favorite memories of Claudia is the trip we took after our graduation from Susquehanna.  Nancy, Mary Beth and Claudia embarked on our Cape Cod Trip in June 1973.  The biggest challenge was setting up a complex (to us) tent. Here's Claudia inside the yellow and green abode that proves we succeeded in putting together a lot of pipes, ropes and stakes our first night!

Our first meal was fire-charred spaghetti cooked over an open flame.  Here's a picture of the dinner... how did we think that long spaghetti sticks cooked in a tiny Girl Scout mess kit would not go up in smoke?  I'm sure this is what inspired Claudia's culinary expertise in later years.

My notes indicate we stayed at Ralph and Rhoda's Redneck Rest Campground, ate raw English muffins for lunch, saw Ted Babbitt driving an ice cream truck, ran into Debbie VanEiderstein in a store (both from Susquehanna), and were terrified to go back to camp after seeing the movie Deliverance.  We loved visiting the beaches on Cape Cod.  Here are Claudia and Mary Beth on a lovely sand path we walked on to Head of Meadows Beach.
 

Near Provincetown we climbed enormous sand dunes - similar to Jockey Ridge in the Outer Banks.  Here's Claudia enjoying the sunset view.  It was well worth the hike up!
 

Good times!  Good times!  I'm grateful for this fun memory of Claudia!

Farmhouse Pictures

 

In the late 70's, Claudia and I moved from our 2 room apartment in Selinsgrove to a farmhouse at the corner of Penn's Drive and County Line Road, outside of Winfield.  It was a very rustic setting.  Beautiful in spring, summer, and fall, but drafty and cold in the winter.  We were young and so much in love; it was a fantastic time in our lives.

Claudia's Kitchen-A Love for All Things Culinary

My sister's love for all things culinary began around the time she graduated from college. I was the one with little time to cook, little budget to add dry and wet goods to my pantry, especially since I shared kitchen space with assorted housemates, and zilch patience to follow recipe instructions.

Claudia on the other hand channeled her innate creative talents into cooking, researching recipes, reworking recipes and expanding her kitchen to include the herbs and vegetables growing in the organic garden a few feet from her kitchen door.

One of her recipes even found favor with a national magazine and was published. She collected cookbooks, all kinds and they overflow her bookshelves, some stuffed with recipes torn from the pages of the New York Times Food section.

Known for their wonderful bounty of delicious dishes, Claudia and husband Jim created their own cookbook one Christmas. Thoughtfully documented, they handpicked recipes enjoyed by family and friend's palates alike. So we  thought it only fitting to share snippets from this unique cookbook. Herewith a favorite recipe we all like, not totally Claudia's own recipe, but a revision of one she found in a magazine.

Triple Bean Salad

Time Factor: 30-an hour ahead to chill and meld flavors
Major Equipment: Colander or large mesh strainer for rinsing and draining beans, cutting board, knife, small mixing blowl, whisk, serving bowl.
Serves: 12 ( makes 6 cups)

Ingredients:

1/2 cup chopped Green Onions
1/2 cup 1/4" diced Green pepper
1/2 cup 1/4" diced Red Pepper
One 15.5 oz can chickpeas, rinsed and well drained
One 15.5 oz can dark red kidney beans, rinsed and well drained
One 15.5 oz. can black beans, rinsed and well drained
3 tablespoons red wine vinegar
2 tablespoons olive oil
1 teaspoon ground black pepper
1 reaspoon lemon juice
1/2 teaspoon salt

Combine green onions, green pepper, red pepper, chickpeas, kidney beans and black beans in a serving bowl. In a small bowl, whisk together vinegar, oil pepper, lemon juice and salt and pour over the bean mixture, stirring to coat. Cover and chill.

Origin: This is adapted from a reader's contribution published in the August 2003 issue of Cooking Light magazine. The reader was from Selinsgrove, PA and said that it was an attempt to recreate a salad served by a now defunct café in that town.

Farewell Sister Claudia~ To a Life Well-Lived


I am Claudia's sister, I wrote her eulogy. So many miss my sister and I hope by reading the below post you will come to know why.

Eulogy for Claudia Ebeling

I thank you all for coming here today in celebration of my sister Claudia’s life. Jim and I opted to call this gathering a “celebration”, because this was a life so very well lived.

Looking around this room, I know one thing; my sister Claudia probably had a funny tale about each and every one of you. You all have starred in a Claudia story. Why? Because Claudia was a keen observer, a gentle spirit enjoying how those around her interfaced at work, with family, with friends, with life. She mentally chronicled how you touched her mind, her heart and yes, her funny bone. She understood humor was the best elixir.

A keen intellect, and avid reader, Claudia could recount the names of characters, plot twists, author bios like some of us can recount-how many toes and fingers we have. Students and former coworkers emailed me in the past few days to share how special Claudia made them feel when attending PGSA, or how focused and hard working she was, how she made their work environment better for having been among them. You all shared what a beacon of light my sister was in your life.

The beacon of light in Claudia’s life was her husband Jim. Their honeymoon spanned 40 years. Wow, 40!  Jim and Claudia had the wonderful fortune of meeting early in life and sharing that life together tending to house cats, traveling to the Outer Banks, attending concerts, hiking, entertaining friends and family at their rambling Victorian townhouse by cooking up amazing meals, and some of the organic ingredients harvested from Claudia’s own garden. Preparing a meal for those she loved was an all encompassing ritual for my sister, she wrote copious lists of what to stock up on before the holiday; her home is filled with classic and current cookbooks. She cared about what she put in her body, but also what she served to you. One thing that meant so much to me was how much my husband Mike treasured hanging out with Claudia in her kitchen at Christmas chatting about everything under the sun. She was indeed a gift to us all.

There’s so much more I want to share with you about Claudia Neva Ebeling. She was that rich of a being. But pressing in mind now is how to honor her spirit as we move forward to cope with this sad void. I believe we have more in common than just being a friend of Claudia’s or a relative. Claudia saw our inherent uniqueness, she saw good in us, so let’s keep that good floating.

Since, Claudia was the conduit that’s connected us all here. Let us remain connected from this day forward.  We have email, we have phones, we can sit and write a letter, we can hang out, we can do this.

Further to honor my sister, I ask that you keep her passions in mind. Read and share the joy of reading with the younger generation. Start an organic garden and promote green living in this state of Pennsylvania. Support and encourage the arts, Volunteer to positively promote your neighborhood community, crack open a cookbook, invite friends over-people here, gather in the kitchen and chat, and chop and stir and simply enjoy the whole process of being together.

Most important to Claudia, me, and my family, is to be there for Jim. I thank Jim for how he took such unwavering care of my sister in her last days. I thank him for fiercely loving my sister in a way, some women only dream about. Be there for him. He carries the biggest part of Claudia in his heart. We are honored for having been in Claudia’s life and so grateful to be in Jim’s.
